Recipe ~ chai spiced gingerbread cookies

I wanted to make these low sugar because I knew our three year old would be polishing most of them off! The actual cookies are quite low in sugar, and you can go very easy on the icing to minimise it further. Ours turned out pretty rustic with a very excited little girl trying to take over all of the steps! These are so easy to make for your Christmas lunch, and you know that there won’t be any artificial ingredients adding to the post Christmas lunch comedown

Ingredients for cookies:
3TBSP Mayde Tea chai latte powder
1/4tsp salt
3tbsp coconut sugar
2tbsp maple syrup
1/2tsp baking powder
3tbsp melted coconut oil
1 3/4 cups flour (I used part spelt and buckwheat)
1 egg at room temperature
1/2tsp vanilla extract

Ingredients for Icing:
1/2 cup sifted icing sugar
1tbsp lemon juice

Method:
Mix dry cookie ingredients in one bowl, and wet in another.
Combine the two and mix well.
Form a ball and wrap in beeswax paper, chill overnight in the fridge.
Preheat the oven to 170 degrees.
Dust the bench with flour.
Roll using a rolling pin or bottle to about 1/2cm thick.
Cut into shapes, then place on a lined baking tray.
Bake for 9 minutes or until light golden.
Mix icing ingredients well and drizzle onto cookies once they are cool.
