Chai Spiced Carrot Cake with Cream Cheese Frosting

Ingredients:

  • 2 carrots, finely grated
  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup olive oil
  • 1/4 cup yoghurt
  • Zest from 1/2 lemon
  • 1 1/2 cup self raising flour
  • 1/4 cup  Chai Latte Powder
  • 1 cup toasted walnuts
  • Pinch of salt

Frosting ingredients: 

  • Juice from 1 lemon
  • Zest from 1/2 lemon
  • 250g cream cheese
  • 2 tbsp Chai Latte Powder
  • 1 tsp vanilla paste

 

Method: 

  1. Preheat oven to 170 degrees fan forces.
  2. In a bowl, combine all wet ingredients.
  3. Fold in the dry ingredients.
  4. Place mixture into a lined baking dish and bake for 40-45 minutes or until a skewer comes out clean.
  5. Mix together all the frosting ingredients and set aside.
  6. Once cake is completely cooled, top with frosting and enjoy!
