Chai Spiced Carrot Cake with Cream Cheese Frosting
Ingredients:
- 2 carrots, finely grated
- 2 eggs
- 1/3 cup maple syrup
- 1/4 cup olive oil
- 1/4 cup yoghurt
- Zest from 1/2 lemon
- 1 1/2 cup self raising flour

1/4 cup Chai Latte Powder
- 1 cup toasted walnuts
- Pinch of salt
Frosting ingredients:
- Juice from 1 lemon
- Zest from 1/2 lemon
- 250g cream cheese
- 2 tbsp Chai Latte Powder
- 1 tsp vanilla paste
Method:
- Preheat oven to 170 degrees fan forces.
- In a bowl, combine all wet ingredients.
- Fold in the dry ingredients.
- Place mixture into a lined baking dish and bake for 40-45 minutes or until a skewer comes out clean.
- Mix together all the frosting ingredients and set aside.
- Once cake is completely cooled, top with frosting and enjoy!
