Chai spiced pumpkin loaf recipe - gluten, dairy and sugar free
Enjoy this nutrient-rich spiced pumpkin bread made with our Chai Latte
Powder for a wholesome breakfast or snack that's full of antioxidants,
vitamins & minerals that support immunity, radiant skin and healthy weight
management. Made without gluten, dairy or refined sugar.
Ingredients:
450g grated raw pumpkin
4 organic eggs
Pinch sea salt
2 teaspoons chai latte powder
¼ cup extra virgin olive oil
2 teaspoons gluten free baking powder
3 cups almond meal
Pumpkin seeds to sprinkle on top
Method
Preheat oven to 160 degrees (fan forced)
Combine pumpkin, eggs, salt, oil and latte powder in a bowl.
Add almond meal and baking powder and mix well.
Grease or line a loaf tin (I used coconut oil)
Spoon the mixture into a loaf tin and sprinkle with pumpkin seeds
Bake for approximately 1.5 hours (cooking times will vary). Check after 1 hour by seeing if a knife comes out clean.
Remove from the oven and allow to rest in the tin for 1 hour before removing.
