A cosy twist on a seasonal favourite, this Spiced Pear Cake is simple, comforting and full of nourishing ingredients.

Infused with the warming flavours of our Chai Latte Powder and sweetened with coconut sugar, it’s the kind of cake that feels like a hug — perfect with a cup of tea on a cool afternoon. The ripe pears become tender and caramelised as they bake, creating a beautifully rustic finish that looks as good as it tastes.

We’ve kept it plant-based and pantry-friendly, making it ideal for last-minute baking or a slow Sunday ritual.

Coconut Sugar
A natural, unrefined sweetener that adds depth and a rich, caramel-like note — without the spikes of refined sugar. It also retains trace nutrients like potassium, zinc, and antioxidants.

Olive Oil
Used in place of butter for a lighter crumb, olive oil provides heart-healthy fats and keeps the cake moist for days.

Chai Latte Powder
Warming spices like cinnamon, ginger and cardamom not only flavour the cake beautifully, but also bring digestive and circulatory benefits.

Pears
Naturally sweet and soft when baked, pears bring moisture, fibre and a seasonal twist that makes this recipe feel a little extra special.



Spiced Pear Cake

Makes 1 cake

Ingredients 

  • 200g self-raising flour or plain flour and add an extra teaspoon of baking powder)
  • 40g coconut sugar
  • 1 tsp baking powder
  • 3 tsp chai latte powder
  • 150ml dairy-free milk
  • 75ml light tasting olive oil
  • 1 tbsp apple cider vinegar
  • 3 ripe pears
  • coconut oil or vegan butter for greasing
  • Icing sugar (optional, for dusting)

 

Method

  1. Preheat your oven to 180°C (360°F).
  2. In a large bowl, mix together all the dry ingredients: flour, coconut sugar, baking powder, and chai latte powder. Break up any lumps with a whisk or spoon.
  3. In a separate bowl, whisk together the wet ingredients: milk, sunflower oil, vanilla essence, and apple cider vinegar.
  4. Pour the wet mixture into the dry ingredients and stir until you have a smooth, lump-free batter.
  5. Peel the pears, then core and slice them into eighths (you may not need to core them if the seeds are soft).
  6. Line a baking tin with baking paper and lightly grease the sides with vegan butter.
  7. Pour the batter into the tin and spread it evenly using a spatula.
  8. Arrange the pear slices on top of the batter in a star or circular pattern. Lightly press them in so they sit on top—don’t push too far down.
  9. Bake for 35 minutes, or until the top is golden and a skewer inserted in the centre comes out clean.
  10. Allow the cake to cool completely in the tin. Once cooled, dust with icing sugar if desired.

Pair with: English Breakfast or Cleanse blends or a Chai latte.
