Chai Sticky Date Pudding with Coconut Caramel

Naturally sweet and fibre-rich, dates bring a soft, caramel-like depth to the pudding while also supporting digestion and sustained energy.
Coconut Sugar
A natural, unrefined sweetener that provides a rich toffee-like flavour, without the highs and crashes of refined sugar. It also contains trace minerals such as zinc, potassium and antioxidants.
Chai Latte Powder
Warming spices like cinnamon, ginger and cardamom not only flavour the cake beautifully, but also bring digestive and circulatory benefits.

Chai Sticky Date Pudding with Coconut Caramel
Ingredients
- 1 cup dates, pitted

1 cup boiling water

1/4 cup melted ghee or coconut oil
- 1/3 cup coconut sugar
- 1/3 cup milk of choice
- 1 cup self raising flour
- 3 tsp chai latte powder
Coconut caramel
- 1 cup coconut milk from a can
- 1/4 cup coconut sugar
- Pinch of salt
Method
- Preheat your oven to 180°C (360°F).
- Place dates in a bowl, cover with boiling water and let sit for 10 minutes. Add to a blender and blend until smooth.
- In a mixing bowl, add in melted ghee or coconut oil, milk and coconut sugar. Mix to combine.
- Add in date mixture, flour and chai powder. Mix to combine.
- Transfer to a lined baking dish and bake for 40-45 minutes.
- Meanwhile, in a pot on medium heat, add coconut milk, coconut sugar and a pinch of salt. Simmer for 4-5 minutes or until the sauce thickens and becomes a deep brown colour.
- After the pudding has cooked, let it cool slightly before pricking a few holes in the top. Pour over the caramel sauce.
- Serve with vanilla coconut ice cream and an extra drizzle of coconut caramel.
Pair with: Earl Grey or a Cacao Collagen latte.
